Saved by Seitan

Recipe title might sound weird but if you read the intro for this recipe, it makes a lot more sense !

So this is supposed to be a beef substitute (it gets used in a few different ways in the cookbook) and they say it should get sliced thin but honestly I love slicing it on the thicker side and using it cold in a sandwich (tasted great with the vegan chipotle mayo) or just snacking on it as is ! As to whether it’ll remind you of beef… not so much for myself but that doesn’t take away from how good this is. The original version wasn’t spicy so we added in a tablespoon of crushed red pepper flakes to the dry mixture and really enjoyed the spicy kick it gave.

Spicy Cheesy Chikn Sandwich, Take 1

I had the idea for a chikn sandwich and was hoping it’d turn out great on the first try. This is how it turned out:

I liked eating the sandwich, I’ve got no problem finishing off the leftovers but I think I’d like to tweak it some more before actually posting the recipe for it. I loved the ooey gooey cheese and the feel of the mushrooms, onion and seitan but even with a sriracha mayo, pepper Jack cheese and pickled jalapeƱo slices, I just wasn’t getting any heat from this ! I guess the bread and provolone cheese balanced out the heat more than I thought it would.

Fried Chicken Burger

Happy “Fry-day” y’all ! Now the title of the recipe says chicken, but this is actually a fried seitan recipe !

Will this look like chicken if you cut it open? No. Does it remind me of the flavor that actual chicken has? Once again, no. Despite those two things though, I really enjoyed this sandwich ! It has enough thickness to it that it creates a meaty quality to it and I love the crispy fried coating that the seitan had. It was great with just some simple mayo and lettuce, mommy tried hers with the addition of Wickles chips and loved the combo. I also tried having some of the Pepita Lime Cabbage Slaw with the sandwich, and it was SO GOOD together !
